Ingredients:

  • 1 bag “Farmer’s Own” Plantain Fries
  • 1 pound ground beef
  • 1 tablespoon sofrito
  • 3 tbsp oil
  • 3 tbsp salt

Instructions:

  • Preheat oven to 375 degrees.
  • Add oil in a fry pan over medium heat.
  • Add the beef and cook for1 5 minutes, stirring occasionally, until brown. Add sofrito and season to linking. Then reduce the heat to medium low and cook for 15 more minutes, stirring occasionally.
  • In a medium saucepan boil some water and add the “Farmer’s Own” plantain fries. Boil for 15 minutes until tender.
  • Drain and let dry completely.
  • Once cooled add to a food processor with salt to taste and 1 tablespoon of oil. Process until a dough forms and it is all well incorporated.
  • Grease a muffin pan with nonstick cooking spray.
  • Scoop a tablespoon of the plantain mixture to each cup in the muffin pan. Work each cup with your hands pressing down and to the sides to create form.
  • Bake for 15-20 minutes until nice and golden
  • Fill with ground beef and serve hot.
