Ingredients:
- 1 bag “Farmer’s Own Cassava Chips”
- 1 pound white fish fillet or salmon
- 2 eggs
- 1 bag mix coleslaw
- ½ cup mayonnaise
- 1 tablespoon siracha
- 3 tablespoon cup cilantro, chopped
- 4-6 small flour tortillas
- Salt and pepper, to taste
Directions:
- Preheat oven or air fryer to 375F.
- In a food processor, process the yuquita chips until fine.
- Slice fish in to 3-inch-long sticks and season with salt and pepper.
- Prepare breading station: one bowl with the eggs whisked, and one bowl with the yuquitas.
- Bred fish by passing through eggs then into yuquitas.
- Place fish in a greased baking sheet or in air fryer basket.
- Cook 10mintes turning once halfway.
- While the fish cooks, mix the mayonnaise and the siracha add mixture to the coleslaw. Adjust seasoning to linking.
- To serve, place fish in the center of tortillas and then the slaw and cilantro.
