Ingredients:

  • 1 bag “Mi Cosecha” Sweet Potato fries, thawed
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon salt, more for boiling
  • 10 tablespoons butter
  • 5-6 fresh sage leaves
  • ¼ cup fresh parmesan cheese, grated

Directions:

  • Place sweet potato fries in a large bowl and add the milk, let them soak to for 30 minutes to retain moisture.
  • Drain and press in a cheese cloth or in with paper towel to make sure it releases all the liquid.
  • Place the drained fries in a food processor and pulse until it has turned into small crumbs, about ten seconds.
  • Add the egg, salt and half the flour and process until it forms a dough, about 60 seconds.
  • Transfer the dough to a clean surface and work it with your hand, adding more flour as you go, until the dough is completely incorporated.
  • Gently knead just until dough comes together (about 1 minute).
  • Cut dough into 4-5 equal portions, and form into balls.
  • Clean the working surface and sprinkle with flour.
  • Roll each ball into a 22-inch-long rope. Cut each rope into small pieces.
  • Cook gnocchi in small batches for 3 minutes, in boiling water, or until they rise to the top.
  • While the gnocchi are boiling, melt butter in a large skillet over medium heat, add sage. Cook 5-7 minutes until butter browns.
  • With a large slotted spoon add gnocchi to pan directly from the boiling water; toss. Cook 1 minute or until browned.
  • Repeat with remaining butter and gnocchi.
  • Serve and sprinkle with cheese.
